Preheat your oven to 425°F (220°C). Separate the eggs, placing the whites and yolks into two different bowls. Using an electric mixer, whip the egg whites with 70 g of sugar until stiff peaks form. In the second bowl, beat the yolks with the remaining 70 g of sugar, honey, and vanilla for about 10 minutes, until the mixture is pale and fluffy.
Sift the flour and add it to the yolk mixture, folding it in gently with a spatula. Finally, fold in the whipped egg whites using gentle bottom-to-top motions to keep the batter airy and prevent it from deflating.
Line a baking sheet with parchment paper that has been dampened and squeezed out. Pour the batter onto the sheet and level it with a spatula. Bake for 7 minutes.
As soon as you remove it from the oven, dust the surface with a little sugar and cover it with plastic wrap to trap the moisture and keep it soft. Allow it to cool completely.
Remove the plastic wrap and carefully peel the sponge cake away from the parchment paper. Spread an even layer of Nutella over the entire surface, then gently roll the cake starting from one of the short ends.
For an elegant look, cut strips of parchment paper, place them over the roll, and dust with unsweetened cocoa powder. Remove the strips to reveal a striped pattern as seen in the photos. Alternatively, simply dust with powdered sugar.
Cut the cake into thick slices and serve on a dessert plate. You can pair it with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent touch.
