Octopus and potato salad is a great classic of Mediterranean cuisine, perfect to enjoy warm or cold. It is a fresh, light, and flavorful dish, ideal for summer but also excellent in winter when served with a good chilled white wine. Thanks to the Thermomix (known as Bimby in Italy), the octopus and potatoes are cooked perfectly and effortlessly, finished with a fragrant parsley and lemon citronette. This versatile recipe can be served as either an appetizer or a main course.
Place 1 garlic clove and some parsley into the mixing bowl. Chop for 5 sec. / speed 7, then add the olive oil and lemon juice and emulsify for 15 sec. / speed 4. Pour the citronette into a bowl and set aside.
Peel the potatoes, cut them into chunks, and place them in the Varoma tray. In the mixing bowl, add the water, white wine, onion (cut into quarters), 1 garlic clove, the remaining parsley, and the whole octopus. Position the Varoma tray on top of the bowl and cook for 30 min. / Varoma / stir speed / counter-clockwise. (If the octopus is larger, increase the ingredient quantities proportionally and extend cooking by 5-10 minutes) .
Transfer the octopus into a container with its cooking water and let it cool slightly, then cut it into bite-sized pieces. In a large bowl, combine the octopus and potatoes, add a pinch of salt, and dress with the lemon citronette
You can serve this dish warm, chilled from the fridge, or at room temperature, depending on the season or your personal preference
